Yesterday over on the Facebook page, I asked you guys what foods you were wanting to try, but had no idea where to start with them. Kale, Artichokes, Chia Seeds, Maca Powder and Quinoa all featured heavily, and I have some AMAZING recipes to share with you over the coming weeks.
Today, I want to talk about the super grain that is Quinoa. This grain has the most complete protein of any grain, and is packed with vitamins, minerals and amino acids. It is great for energy and keeping you full for a long time. You can have it as part of breakfast, lunch or dinner. It’s easy to cook, and I absolutely love the texture. If you haven’t tried this delicious grain, give it a go.
The recipe I have for you today is like no other salad I’ve ever tasted. My beautiful soul sister, Sarah, brought this salad into my life, and since then – I haven’t looked back!
We now eat this almost once a week – even my meat and pasta loving husband can’t get enough!
1 cup Quinoa. Cook according to instructions on the packet. But make sure you rinse the grains really well first until that “soapy-ness” has gone. Once cooked and cooled, cover in lemon-rind & the dressing of fresh Lemon, Lime & Orange juice.
BBQ Corn (get the fresh corn cobs and cook them on the BBQ).
1 can Black Beans
Toasted Pine Nuts
Finely Chopped Celery
Grilled free-range Chicken Breast marinated in Garlic, Ginger and Chilli
Mix it all together and away you go! This salad is even better the next day when all the flavours have soaked in.
Now, I know there isn’t a lot of quantity here, but it’s all according to taste. Throw in as much or as little as you like. For our family of four, I put in about 4 corn cobs, 4 chicken breasts, 1/4 cabbage and there is always leftovers!
This is without doubt, the perfect summer salad!
