A couple of weeks ago, I tried a Pistachio and Lime ball at one of my fav local cafes. It was a taste sensation.
I needed more of these balls in my life.
So I took to my kitchen and tried to replicate them – and I think I’ve done a darn good job!
And then I posted a photo of said balls on social media – it seems you guys wanted these balls in your life too. So here I am, blogging on a weekend, to make sure you can try these balls yourself.
These babies are packed full of energy, not too sweet and leave a little, very welcome zing.
PISTACHIO & LIME BALLS
1 cup pistachios
3/4 cup almond meal
6 medjool dates (if you’d like it sweeter, add more)
1/4 cup shredded coconut
zest of 1 lime
3 TBS coconut oil (experiment a little here – my balls were quite soft (LOL! Oh my maturity levels!), even when kept in the fridge. You may need to add more or less)
Whizz up the pistachios in the food processor
Add the almond meal, coconut, dates and zest and give it another whizz until combined
Finally add the coconut oil – give it one final blast, and then shape into balls.
Store in the fridge. They should last about a week, but mine lasted 2 days as they were gobbled up so quickly!
